
Blueberry season is here and my blueberry bushes are producing well. Blueberries are one of my favorite fruits. While I’m not a big fan of pies I just had to make this easy blueberry pie recipe.
I am going to admit right away that the crust is not homemade. That is something I have not mastered yet. I tried many years ago and it was a flop and have not tried since. But it is on my bucket list! If you like blueberry pie, read on!

Blueberries have lots of nutrients and are high in fiber. Wow, “superfood” indeed. I know that is just eating blueberries alone. But why can’t we have a little pleasure while reaping some of the benefits of blueberries? There is only 1/2 cup of sugar in this easy blueberry pie recipe. Not bad right? We need all the help we can get.
Can You Substitute Frozen Blueberries For Fresh
In one word, yes. Blueberries are frozen right after they are picked. The nutritional value is the same as fresh blueberries. So if you don’t have access to fresh berries, not a problem. Frozen blueberries can be found in the freezer section of your local grocery store.
Easy Blueberry Pie Recipe: The Ingredients
- 1 pint or 2 cups of fresh blueberries(or frozen)
- 1/2 cup of sugar
- 2 tablespoons of cornstarch
- 1/2 cup of water
- crust(2)
- 1/2 teaspoon lemon juice(optional)
That’s it. It doesn’t look like enough ingredients, does it? But I assure you it makes one tasty pie.
Directions For Making this Easy Blueberry Pie Recipe

In a medium saucepan add the sugar and cornstarch. Mix well so there are no lumps. A whisk works well for this step. Add water and blueberries stir well. Cook until the mixture thickens stirring often. Make your pie crust or as I do, unroll the premade pie crust into your 9-inch pie plate. Add the blueberry mixture and cover with top crust. Brush the top crust with egg white and sprinkle with sugar. Don’t forget to vent your top crust to allow steam to escape while the filling is cooking. Just cut some slits with a knife.
Bake in a 400-degree preheated oven for 15 minutes then 350-degree oven for 40 minutes or until the crust is golden and filling is bubbling through the vents.
How to Tell When Your Pie is Done
The top crust is nice and golden. The filling is bubbling through the vents or edges of the pie is another good indication the pie is done. Let the filling bubble for about 5 or 6 minutes before taking it out of the oven.

This blueberry pie recipe couldn’t be any easier. The hardest part is the crust but if you are like me(I suck at making homemade crust) just use a pre-made one. I like the ones that you just roll open.
